Across Texas, immigrant bakeries add Mexican pan dulce, Vietnamese banh mi bread, Chinese buns, Middle Eastern sweets and European rye to the mix, and many gluten-free and vegan bakeries have opened in larger cities. Day-old bread and end-of-day discounts are common if you ask.
